Mole is basically a sauce made from chili peppers, spices, and seeds. It is a symbol of Mexico and is an integral part of national festivals and special occasions. It is an essential dish for the Day of the Dead.
- 1kg pork cut into pieces
6 guajillo chiles
6 dried ancho chiles
Approximately 1 clove of garlic
1 onion
1 kg of tomatoes or ripe tomatoes
1 bouillon cube
1/4 tablespoon cloves
1/4 tablespoon freshly ground allspice
100 grams of roasted sesame seeds or sesame seeds
1kg potatoes
1 ripe banana
1 bay leaf
1 tablespoon each of the following herbs: oregano, chopped coriander, and mint.
Season with cinnamon stick, salt, and pepper.
Boil the pork with onions, garlic, bay leaves, salt and pepper, bring to a boil and reduce the heat. Remove the broth and simmer until the meat is tender.
Roast the chiles until they change color, then submerge them in boiling water and leave for 25 minutes to soften. Pour the tomatoes into boiling water and remove the skin. Let cool.
Remove the chili peppers from the water, remove the seeds and stems, puree them in a processor with a little liquid, add the tomatoes, peppers, sesame seeds, cloves and bananas and grind until pureed.
Remove the meat from the soup and set aside. Meanwhile, boil the tomato sauce in a saucepan until thickened and add the potatoes, cinnamon stick and various herbs. To cook potatoes, you need to cover them with tomato sauce.
When the potatoes are soft, add the meat.
