Green sauces are almost always milder than red sauces. The main difference between regular salsa and green salsa is that tomatillos are used instead of red tomatoes. It’s the tomatillos that give the salsa his verde a strong, spicy flavor, along with hearty roasted chile and green onion flavors. And it only takes 15 minutes to prepare!

material:

  • 12-15 tomatillos (peeled and quartered)
  • 5 cloves of garlic
  • 1 medium onion, chopped (not finely)
  • 1 bunch coriander
  • 1 teaspoon salt
  • 1 teaspoon vegetable oil
  • 1 jalapeƱo (seeds removed)
  • Toast and peel 3 large green chiles (poblano, ancho, anaheim, hatch, etc.).
  • 1 tablespoon lime juice

Preparation:

Add onion, jalepeno, and tomatillo to food processor and pulse 4 to 5 times.

Add remaining ingredients and pulse until desired consistency.

The green sauce can be served immediately, but it’s best to let it sit in the fridge overnight so the flavors meld.
