Mexican food always comes with sauce.

This traditional recipe is perfect for seasoning everything from tortillas to meat. It provides the intense, spicy flavors that make up the essence of Mexican cuisine.

  • 6-8 ripe tomatoes (finely chopped)
  • tomato juice 100ml
  • 3-4 cloves of garlic (chopped)
  • 1/2 to 1 bunch coarsely chopped fresh coriander

  • 3-4 fresh green chiles, such as jalapenos or serranos, seeded and finely chopped
  • 1/2 to 1 teaspoon powdered cumin

To make a thick, raw sauce, combine the ingredients in a non-metallic bowl and season with salt. Cover the sauce and refrigerate until ready to serve.

To make a fine-grained sauce, combine all ingredients in a food processor. Cover and chill in the refrigerator.


If you want your raw sauce to have a fruitier, fresher flavor, use finely chopped orange pieces and pitted and diced cucumbers in place of the tomatoes.
