How to make zebra muffins
First, separate the yolks and whites and whisk the yolks with salt until stiff peaks form.
Separately, whisk the yolks and sugar for at least 10 minutes until a light and fluffy mixture is obtained, then, while continuing to whisk, gradually add first the oil, then the milk, and finally the sifted flour.
Mix carefully with a spatula, add the egg whites first, then divide the mixture into two bowls, add the vanilla to one and the sifted cocoa to the other, if it seems too thick compared to the other. Also add 2-3 tbsp. One glass of milk at a time.
Assemble the muffins. Pour 1 teaspoon of the light mixture into the bottom of the baking cup, add 1 teaspoon of the dark mixture to the center, then add the light mixture again to the center, continuing until the cup is 3/4 full.
Proceed similarly with all other baking cups and bake in a preheated ventilated oven at 180°C for 15-18 minutes.
Zebra muffins are ready. At least let it cool before eating.
