how to make potatoes in a pot
First, peel the potatoes, wash them, and cut them into wedges (not too thin, I think about 1cm).
Place in a bowl, cover with plenty of cold water, and let stand for at least 30 minutes (this will release the starch and reduce its crispness, but at the same time it won’t oxidize).
Drain the potatoes, dry them with a clean cloth, and place them in a large nonstick pot of heated oil with the garlic.
Season to taste for 5 minutes, then remove the garlic, season with rosemary, salt and pepper, cover and simmer over low heat, stirring occasionally, for about 15 minutes.
Finally, remove the lid, increase the heat and cook for another 5 minutes until browned. Stir constantly to avoid burning.
When your fried potatoes are ready, simply serve with a little fresh rosemary.
