How to make onion parmigiana
First, prepare the tomato sauce. Fry the garlic, oil and chili pepper in a frying pan, add the puree, season with salt, pepper and leave for at least 20 minutes to create a thick sauce, at the end remove the garlic.
Meanwhile, peel the onion and cut it into thick slices (1-2 cm). Be careful not to let the slices separate.
Dip the slices, one at a time, into the semolina and coat well with the breadcrumbs.
Fry the onions in the hot oil until evenly browned, then drain using a slotted spoon on kitchen paper.
Assemble the Parmigiana. Pour some tomato sauce into the bottom of the baking dish, add a layer of onions, a layer of shredded mozzarella, a little Parmesan, then add more sauce and repeat until all ingredients are used. Top with tomatoes.
Finally, sprinkle plenty of Parmesan cheese on the surface and bake for 25 to 30 minutes at 180℃ with a preheated ventilation fan.
The onion parmigiana is complete. Let rest for at least 10-15 minutes before eating.
