How to make lentil and potato soup
Wash the lentils thoroughly and soak in cold water for at least 30 minutes.
Drain the water, fill a pot with plenty of cold water, and bring to a boil.
In the meantime, clean the vegetables and cut them into cubes (celery is usually removed at the end of cooking, so leave it whole).
Add them to the lentils along with the puree and cook for at least 30 minutes or until all ingredients are well cooked, adding more hot broth if needed and seasoning with salt and oil at the end.
The lentil soup is ready. It can be served hot, hot or cold.
