How to make mediterranean style potatoes
Rinse the potatoes under running water, peel, dry and cut into wedges.
Peel and slice Tropea onions
Transfer the potatoes to a bowl and season with the garlic, salted capers, and pitted black olives.
Also add onion and tomato puree. Season with salt, pepper, extra virgin olive oil, and oregano and mix.
Pour the potatoes onto a baking sheet lined with baking paper. Cook for about 40 minutes in a ventilated oven preheated to 190 degrees. Be careful to stir halfway through cooking.
When ready, enjoy.
