How to make Lyonnaise potatoes
Wash the potatoes, place them in a saucepan filled with cold water, bring to a boil and cook for about 35 minutes (be sure to test; insert the tines of a fork into the potatoes and if they come out easily, they’re ready) . , peel and cut into fairly thin slices (1 cm or more).
Peel the onion and cut it into very thin slices as well.
Melt half the butter in a large nonstick saucepan, brown the potatoes, then remove the potatoes (leaving them warm) and sauté the onions in the remaining butter and a little oil in the same saucepan.
Return the potatoes to the pot with the onions and season lightly with salt and parsley.
