How to make fried eggplant
Wash the eggplant, remove the ends, and cut into rounds of even thickness.
Pass the slices through the semolina and use your hands to make sure both sides are sealed.
Heat the oil in a large frying pan and fry, stirring, until evenly browned, then drain on paper towels and season with salt.
The fried eggplant is now ready.
