How to make rice soup
First, clean the herbs and cherry tomatoes and cut them into small pieces.
Place the chicken thighs in a pot, completely cover with water, add the vegetables and a little oil.
Peel the potatoes, cut them into chunks, and add them to the pot.
Cover and leave for about 1 hour.
Next, remove the vegetables with a slotted spoon and mix.
Drain the chicken thighs, strain the soup into a pot, add the blended vegetables to the soup and season with salt.
Add the rice to the soup and cook.
When the rice soup is ready, plate it, garnish with fresh parsley and serve immediately.
