This is a little known Mexican recipe. Drowning eggs with nopals*. It combines the flavors of nopales, eggs, and chili peppers. Nopales are delicious and nutritious.
*Nopal is a cactus that is edible when roasted or steamed. It can be eaten warm or as a salad. If you don’t have nopales within reach, you can substitute green beans, green beans, or green beans (though they don’t taste the same).
material: for 4 people
- 1/2 kg cooked chopped nopales
- 2 medium tomatoes (chopped)
- 1 small onion chopped
- 2 green chillies (chopped)
- 4 eggs
- cotija cheese
- chopped coriander
- oil
- salt
preparation
Heat oil in a pan and immediately add tomatoes, onions, and green chillies.
Add the nopales and finally the eggs and salt.
It doesn’t stick because it’s always moving.
Garnish with sliced or grated cotija cheese and chopped cilantro.
