How to make crepes without eggs
Combine the sifted flour, milk, oil, salt, and vanilla in a bowl and mix well with a whisk until you have a smooth dough with no lumps.
Heat a flat-bottomed non-stick frying pan, brush it with a little vegetable oil, then pour in a ladleful of batter, rotating the pan to distribute the batter evenly across the bottom.
Cook over medium-low heat until the edges of the pan begin to separate from the pan, then gently lift with a spatula and lightly sear the other side as well.
When ready, stack the crepes on a plate.
