Bright and tangy, this cilantro garlic salsa is perfect for summer cooking. It’s delicious when you eat juicy roast pork with summer vegetables.
material: Makes 1 1/4 cups
– 1 teaspoon coriander seeds
– 1/2 teaspoon cumin seeds
– 1 green cardamom pod
– 1/2 cup chopped cilantro
– 2 cloves of garlic
– 1 jalapeño, stemmed, seeded and chopped
– 3/4 cup extra virgin olive oil
– As salty as you like
Preparation:
Add coriander, cumin, and cardamom to a frying pan and stir-fry over medium heat.
Stir occasionally until seeds are toasted, about 5 minutes.
Finely grind the seeds in a spice grinder and transfer to a medium bowl with the cilantro, garlic, and jalapeños.
Add the olive oil and mix with a fork. Season the sauce with salt.
