Enchiladas are a traditional Mexican dish made of corn tortillas stuffed with beef, chicken, or turkey and topped with a spicy sauce. These can be served with shredded lettuce, freshly sliced onions, cotija or aged cheese, and liquid cream. Enchilada recipes vary depending on the ingredients available in each region, and it can be said that there are over 300 types of enchiladas throughout Mexico.

- 1 onion
2 tablespoons olive oil
1 clove of crushed garlic
450g tomato puree
A pinch of cayenne pepper
1 teaspoon chili powder
500g boiled chicken breast cut into strips
12 corn tortillas
250g cream
1 teaspoon concentrated soup
150g coarsely grated cheese
Preparation:
Fry the chopped onions in olive oil. Once softened, add the garlic, tomato puree, cayenne pepper, chili pepper, and chicken. Simmer for about 10 minutes.
Spread this mixture over tortillas, roll them up and place them in a greased baking dish.
Heat the cream, add the concentrated broth and pour it over the pancakes. Top with cheese and bake at medium temperature for 30 minutes.
