  • 1 piece of tender chicken (divided into small pieces)
  • Roast, peel and cut 3 poblano chiles into thick slices.
  • 3 tomatoes, mashed and pureed
  • 1 medium onion, thinly sliced
  • 100 grams.olive
  • 1 clove of minced garlic
  • frying oil (as needed)
  • 1 sprig of coriander
  • Salty as you like


Fry the already cleaned chicken in hot oil.

When well browned, drain the fat and season the onions and slices with the remaining fat.

When it becomes transparent, add the chicken again and cover with the crushed tomatoes and garlic. Season with salt, add coriander sprigs and olives. Cover and simmer over low heat until the meat is cooked through and the sauce has thickened.

If you need a little water for cooking, you can add more water.But it’s cold
