Baked chicken with peanut sauce – Mexican recipe

A very special recipe – grilled chicken marinated in peanut sauce. Peanuts are a popular ingredient in Mexican cooking and can be used to make delicious sauces. This recipe is so easy to make and so delicious.


  • Cut chicken thighs into 4 equal pieces (approximately 1 kg).
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Honey roasted peanuts 85g
  • 1/2 cup fine breadcrumbs
  • 2 cloves of garlic (chopped)
  • 1 teaspoon salt
  • 1/4 teaspoon red chili pepper


Place chicken in a shallow dish or heavy-duty resealable plastic bag.

Mix peanut paste with soy sauce, honey, lemon zest and juice.

Pour the mixture over the chicken. Cover or seal and chill for 30 minutes, stirring occasionally.

Remove chicken from marinade. Discard the marinade.

Place the peanuts and other ingredients in a blender and blend until the mixture resembles breadcrumbs.

Place these crumbs with the chicken in a heavy-duty resealable plastic bag and seal. Shake so that the chicken is completely covered with the mixture.

Next, place the chicken in a lightly oiled baking dish and bake at 375° for 45 minutes or until done.
