Pot Beans – Mexican Recipes

These stewed pinto beans can be eaten with tortillas as a snack or as an accompaniment to a variety of delicious foods.


Ingredients: For 6 people

  • Pinto beans 450g
  • 1/2 small white onion (thinly sliced)
  • 2 tbsp.lard, fat, or canola oil
  • Salty to your liking
  • cream or sour cream for garnish
  • 1 cup grated Oaxaca or mozzarella cheese
  • Serrano chile, please enjoy
  • Enjoy your warm tortillas

Preparation:

In a 4-quart pot, add beans, onions, lard, and 10 cups of warm water. Heat over medium-high heat until boiling.

Reduce heat to medium-low and cook, covered, stirring occasionally, until beans are tender and beginning to open, about 2 hours.

Add salt and continue cooking. Mash some of the beans in the pot while cooking until the beans are completely soft (about another 30 minutes).

To serve, place the beans in a bowl and garnish with a little cream and a little cheese.

Serve with chili and tortillas.
