Delicious vegetable enchiladas to celebrate the Christmas holiday. And it’s ready in 1 hour!
material: Serves 8 people
- 1/2 cup mushrooms
- 1/2 cup chopped red and orange peppers
- 1/2 cup corn
- 1/4 cup chopped asparagus
- 1 cup chopped onion
- 1 cup red sauce
- 4 tablespoons oil
- 8 medium tortillas
- 1/3 cup grated mozzarella cheese
- 1/3 cup grated cheddar cheese
- 1/3 cup chopped tomatoes
- Chives 50g
Preparation:
Preheat oven to 400 degrees Fahrenheit.
Cut all vegetables.
Heat the oil in a frying pan and add all the vegetables. Stir and cook until tender.
Heat the oil in a separate frying pan, add the onions and sauté for a few minutes or until the onions become transparent.
Add the corn and mix, then add the chopped chives and mix. Sprinkle oil on tortillas and heat in a frying pan.
Prepare warm tortillas. Add vegetables and red sauce to it. Roll up. Repeat this process for as many tortillas as desired.
Place tortillas on a baking tray. Sprinkle with mozzarella, cheddar, tomatoes, and chives. Bake for 25 minutes.
Serve the enchiladas piping hot.
