- Anchovies 1kg
- 3 eggs
- flour
- salt
- extra virgin olive oil
- Vinegar
- garlic
- parsley
Clean the anchovies.
Beat the eggs with a whisk, add a pinch of salt and a little flour and mix until a soft dough is obtained.
Fry the anchovies in hot oil and place on absorbent paper to remove excess oil.
Arrange the anchovies on a plate and add the vinegar, chopped garlic and parsley.
Let rest for a few hours before eating.
Alternatively, you can add the vinegar, garlic, and parsley directly to the pot and let them evaporate a little.
