This is a very easy and very quick recipe. This is a versatile recipe that can be used in a variety of situations, and is also recommended for vegetarians.

material: For 4 people

  • 4 flower tortillas
  • 400g refried beans (canned beans are also acceptable)
  • A pinch of cayenne pepper
  • 200g adzuki beans (soak adzuki beans in water and drain (canned ones are also acceptable))
  • 2 handfuls cherry tomatoes (cut into quarters)
  • Vegetarian cheddar cheese 50g
  • 1 green chilli (thinly sliced)
  • 1 avocado, cut in half and sliced
  • handful of coriander leaves

Preparation:

Heat the grill to medium-high heat. Place two tortillas on a large baking sheet and place under the grill for 2 minutes.

Combine refried beans, cayenne pepper, kidney beans, and cherry tomatoes in a bowl. Then divide half of the mixture between the tortillas.

Sprinkle with half the cheese and half the chile.

Then put it under the grill again until the cheese melts.

Transfer to a plate and top with half the avocado and cilantro. Repeat with remaining tortillas.
