Method
How to make pepper cream soup
First, peel the peppers and potatoes, then cut the former into strips and the latter into cubes.
You can also add thinly sliced onions if you like.
Bring the soup to a boil, add the vegetables and simmer until tender and the soup has almost evaporated.
Set aside a small amount of broth and mix the vegetables with a blender until a smooth cream is obtained. Add a little of the remaining broth if necessary to get a more liquid puree (depending on your preference).
Now the pepper soup is ready. Serve chilled, garnished with fresh basil and a little crumbled feta cheese.
