Mexican Sweet Rolls – Mexican Recipes

  • 3 1/2 to 4 cups all-purpose flour
  • 1 bag of active dry yeast
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 cup fat or butter
  • 1 teaspoon salt
  • 2 eggs
  • 2/3 cup soft flour
  • 1/2 cup sugar
  • 1/4 cup butter or margarine
  • 2 beaten egg yolks
  • 1/4 teaspoon vanilla


Combine yeast and 2 cups flour in a large bowl. Heat milk, 1/4 cup sugar, fat or butter, and salt in a saucepan over hot (115° to 120°), stirring constantly. Next, add the dry ingredients in the bowl. Add whole eggs.

Mix with an electric mixer on low speed for 30 minutes, scraping down the bowl, then mix on high speed for 3 minutes. Add enough remaining flour (1 1/2 to 2 cups) by hand to form a moderately stiff dough. Knead the dough on a lightly floured surface for 8 to 10 minutes, or until smooth.

Place in a greased bowl. Please turn it once. Cover; let rise 1 to 1 1/4 hours or until doubled in size. Punch the dough into 16 equal pieces and roll each piece into a ball. Flatten the bread with your palm to form a circle about 7cm wide. Place the rolls on a greased baking tray, leaving a distance of about 4 cm between each roll.

Next, mix 2/3 cup flour and 1/2 cup sugar. Add small pieces of butter to the dough and form crumbs. Add the egg yolks and vanilla and stir with a fork. Then mix by hand until everything is well mixed.

Divide the mixture into 16 portions. On a lightly floured surface, use a rolling pin to roll out the dough into a 7cm circle. Using a spatula, transfer each circle and place on top of the roll on a baking sheet.

Use a knife to make cuts in the top of each roll to form a square, circle, or shell shape. Cover and let rise for 30 minutes. Bake in the oven at 375°F or 190°C for 15 to 18 minutes.
