First, wash the potatoes thoroughly under running water, put them in a large pot, pour plenty of cold water, bring to a boil and simmer for about 20-30 minutes (depending on the size of the potatoes). It needs to be cooked as is so it doesn’t start to fall apart.
Drain the potatoes, place them on a baking sheet lined with baking paper, and mash them with the bottom of a glass (or a meat mallet) without peeling them.
(If it’s still stuck to the glass, apply a little oil before breaking it.)
Season the potatoes with a pinch of salt and a little oil and bake for 10 minutes at 200°C in a preheated extractor fan.
Remove the potatoes, season with a small amount of stracchino, a piece of salmon and another small amount of stracchino, reduce the oven to 190°C and cook for another 10 minutes.
Mashed potatoes with salmon and stracchino are ready. Serve warm, or at most warm, with a pinch of chopped parsley and fresh pepper.
