Manjar Blanco – Mexican Recipes

Manjal blanko is another way to make rice pudding, which is a popular dessert.


  • 1 liter of milk
  • 170 grams of rice
  • 800 grams sugar
  • 4 figs
  • 1/2 cup raisins
  • pinch of salt


Soak the rice in water for two days, strain it, grind it, and boil it in a pot (preferably copper) with milk, salt, and a pinch of sugar.

Stir vigorously continuously using a wooden spoon. Cook over high heat until it boils, then reduce the heat and continue stirring until you can see the bottom of the pot.

Remove from heat and add raisins. Pour into individual glasses and garnish with cut figs.
