How to make green onions and potatoes
First, peel and wash the potatoes, cut them into thin slices to prevent them from oxidizing, and keep them in a bowl of cold water and ice.
Peel the green onions and shallots and cut these separately into thin slices as well.
Brown the shallots in a large non-stick frying pan with a pinch of butter, add the green onions, salt and sauté for a few minutes.
Add potatoes and season to taste.
Add cream and cook, stirring frequently, for about 15 minutes. The cream should be almost completely dry, and the potatoes should be soft, but not crumbly.
Grease a baking dish with butter, pour in half the potatoes, level well, make a layer of fontina and parmesan cheese, then a second layer of cheese, complete with breadcrumbs and flakes of butter.
Bake in a preheated oven at 180℃ for 20 minutes, then turn on the grill and bake for another 5 minutes.
The green onion and potato flan is completed. Let rest for 5-10 minutes before eating.
