How to make spinach Genoa style.
First prepare all the ingredients. Soak the raisins in hot water.
Wash and clean the spinach, put it in a pot with dripping water, cover it, dry it without adding water, and squeeze it gently.
Drain the anchovies, remove the bones, cut into small pieces, and melt in a frying pan with plenty of oil and garlic.
Add the cinnamon, then add the drained and squeezed raisins and pine nuts, season with salt, and simmer over low heat for about 10 minutes.
The Genoa spinach is complete. Serve hot, warm, or cold, depending on your preference.
