How to make fava bean soup
First, remove the pods from the beans, peel them, and wash them.
Meanwhile, boil water in a pot.
In a large nonstick frying pan or saucepan, sauté diced bacon and chopped onion in oil, add fava beans and season to taste for a few minutes.
Pour boiling water and cook for 25-30 minutes, stirring as needed.
When the fava beans are cooked and soft, season with salt and pepper, ladle the soup into a ladle, blend with a blender, and add the puree to make it even thicker and creamier.
Once your fava bean soup is ready, simply garnish with a little fresh thyme.
