Jose uses piquillo red chili peppers. This is a large chili pepper that is sweet and not spicy. If you like sauces with a spicy taste, just replace the pepper with your favorite.

material:
– 1 medium onion (chopped)
– 2-3 red piquillo peppers
– 1 cup vegetable or meat broth
– Cooking cream (milk cream) 125cc
– As salty as you like
Preparation:
Fry the chopped onions in a little oil until caramelized. Add the chopped bell pepper and simmer for a few minutes.
Add the broth and boil for a few minutes until everything is cooked.
Then transfer to a blender and pulse until thick and creamy.
Return to the pot, add the cream and boil for 1 minute.
Season with salt and enjoy with fish or meat.
