- 8 large ancho chiles, deveined and seeds removed
stuffing material
- 1 large can of 250g. Sardines in tomato sauce.
- Finely chop 1/2 large onion
- 1 clove of finely chopped garlic
- 2 tomatoes, seeded, finely chopped
preparation
Soak ancho chiles in warm water for 6 to 8 hours until soft.
Fry onions and garlic in olive oil.
Add tomatoes. Next, add the contents of the can of sardines (boneless).
Cook until the liquid is consumed and a thick fried filling is obtained.
Stuff this mixture into the ancho chiles.
Serve on a platter.
Garnish with onion rings drizzled with vinaigrette.
Dress it up with olive oil.
Cover with transparent film. Refrigerate until ready to eat.
