A very healthy soup with sweet onions, coriander and sour cream.

Yomaterial: for 2 people

  • Juice of 2 lemons
  • 2 small red onions (thinly sliced)
  • 1/2 tablespoon olive oil
  • 2 cloves of garlic (finely chopped)
  • 1/2 tablespoon cumin powder
  • 1/2 tablespoon smoked paprika
  • 1/2 tablespoon chipotle paste or Tabasco (amount of your choice)
  • 400g black beans (drain and wash)
  • Vegetable soup 400ml
  • sour cream serving
  • Coriander leaves (please enjoy)
  • Enjoy crispy tortilla chips

Preparation:

To make the lemon pickled onions, combine half the lemon juice and half the onions in a small bowl and season. Leave for 30 minutes.

Meanwhile, heat the olive oil in a frying pan over medium heat. Add garlic and remaining onion to taste.

Cook for 8 minutes or until onions are translucent.

Add spices and chipotle puree. Cook for 1 minute, then add beans, broth, and remaining lemon juice.

Boil for 15 minutes and puree in a blender.

Pour the soup into a clean container and reheat.

Serve with drained pickled onions. And pour a little sour cream and coriander on top.Opa
