Apple enchilada dessert – Mexican recipe

Apples are rolled in flour tortillas. It’s very delicious, easy and quick to make. You can also replace apples with peaches or cherries, depending on your preference.

For the apple filling:

  • 4 medium apples
  • 3 tablespoons water
  • 2 spoons of butter
  • 1 teaspoon cinnamon
  • 1/3 cup sugar
  • 1 tablespoon cornstarch 1 teaspoon (cornstarch)
  • 2 tablespoons water
  • If you want it spicy, add a little chile de arbol (optional)

Preparation:

Peel, core and cut apples into chunks

Melt the butter and cinnamon over medium heat. Add apples, sugar and 3 tablespoons water.

Cover and cook, stirring occasionally, 4 to 6 minutes or until slightly tender.

Combine cornstarch and water in a small dish. Add to the pan, stirring, and continue cooking until the apples are soft (do not puree) and the filling has thickened. Whisk for 1 minute. Let cool.

Note:

Some apples are juicier than others. If you want the filling to be thicker, mix 1 tablespoon cornstarch with 1 tablespoon water. When the mixture boils, add it in portions until the desired consistency is reached.

How to make enchiladas

material: Makes 6 large tortillas.Cut in half to make 12 pieces

  • 6 flower tortillas
  • 1 teaspoon powdered cinnamon
  • 1/3 cup margarine
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Preparation:

Preheat oven to 350 degrees F (175 degrees C).

Place fruit evenly on all tortillas and sprinkle with cinnamon. Roll the tortillas and place them face down on a lightly oiled baking sheet.

Bring margarine, sugar, and water to a boil in a medium saucepan. Reduce heat and simmer for 3 minutes, stirring constantly.

Pour the sauce evenly over the tortillas. Sprinkle more cinnamon on top if desired. Bake in the preheated oven for 20 minutes.
