Blue Cheese and Sage Guacamole – Mexican Recipe

A typical recipe for a May 5th party.

material: Makes 2-3 cups

  • 3 avocados
  • 2 pieces of bacon
  • 1/4 cup blue cheese (crushed, room temperature) (or Gorgonzola cheese)
  • 1/4 red onion (chopped)
  • 1 Roma tomato, seeded and finely chopped
  • 1/2 bell pepper 1/2 jalapeƱo (finely chopped)
  • 1/4 to 1/2 teaspoon cumin powder (optional)
  • 1/4cteaspoon of salt
  • 1 teaspoon minced garlic
  • 1/2 fresh lemon juice
  • 2 tablespoons finely chopped fresh coriander
  • Tabasco sauce, garlic flavor (optional)
  • Chipolte chili powder (only)
  • 1/2 teaspoon dried sage (or 1 teaspoon chopped fresh sage)
  • pepper

Instructions:

Combine onion, tomatoes, jalapeƱos, coriander, cumin powder, salt, and garlic in a bowl. Mix well, cover, and leave in the refrigerator for at least 60 minutes.

Cut 1 avocado into small pieces. Add to container along with other ingredients.

Mash the remaining 2 avocados and add to the bowl. Stir into mixture.

Add blue cheese and bacon crumbles. Mix again. Be careful not to over-stir the guacamole as you want to keep the avocado as firm as possible.

Add Tabasco, chipotle powder, sage, and pepper mixture to taste. Mix as needed.

Squeeze half a lemon over the mixture. Mix again.

Enjoy with fries.
