A typical recipe for a May 5th party.

material: Makes 2-3 cups
- 3 avocados
- 2 pieces of bacon
- 1/4 cup blue cheese (crushed, room temperature) (or Gorgonzola cheese)
- 1/4 red onion (chopped)
- 1 Roma tomato, seeded and finely chopped
- 1/2 bell pepper 1/2 jalapeƱo (finely chopped)
- 1/4 to 1/2 teaspoon cumin powder (optional)
- 1/4cteaspoon of salt
- 1 teaspoon minced garlic
- 1/2 fresh lemon juice
- 2 tablespoons finely chopped fresh coriander
- Tabasco sauce, garlic flavor (optional)
- Chipolte chili powder (only)
- 1/2 teaspoon dried sage (or 1 teaspoon chopped fresh sage)

Instructions:
Combine onion, tomatoes, jalapeƱos, coriander, cumin powder, salt, and garlic in a bowl. Mix well, cover, and leave in the refrigerator for at least 60 minutes.
Cut 1 avocado into small pieces. Add to container along with other ingredients.
Mash the remaining 2 avocados and add to the bowl. Stir into mixture.
Add blue cheese and bacon crumbles. Mix again. Be careful not to over-stir the guacamole as you want to keep the avocado as firm as possible.
Add Tabasco, chipotle powder, sage, and pepper mixture to taste. Mix as needed.
Squeeze half a lemon over the mixture. Mix again.
Enjoy with fries.
