How to make whipped shortbread muffins
First, whisk the soft butter with the sugar for at least 5 minutes. You will get a foamy cream.
Add the eggs and vanilla and begin whisking again.
Once thoroughly mixed, add the flour 1 tablespoon at a time, stirring carefully from bottom to top with a spatula to prevent the mixture from crumbling.
Fill each mold with a small amount of pastry (pre-dusted with butter and flour) and spread with your fingers or a teaspoon to create an even layer over the surface of the mold.
Add 1 teaspoon Nutella to the center.
Using a piping bag with a star-shaped nozzle, cover with another layer of whipped dough and bake in a fan oven preheated to 180℃ for about 20 minutes.
When the whipped shortcrust muffins are ready, let them cool completely before removing and serving.
