Slow Cooker Pork and Green Chili Stew – Mexican Recipe

It’s a very delicious stew. The meat is slow-cooked and very tender.

  • 1 kg (150 g) boneless pork loin, cut into 1 1/2 cm cubes
  • 400g diced tomatoes
  • 400g diced green chilli
  • 2 sweet potatoes (peeled and cut into 1cm cubes)
  • 1/2 onion (roughly chopped)
  • 5 cloves garlic (chopped)
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • Appropriate amount of black pepper
  • 1 tablespoon hot pepper sauce
  • 1 cup frozen corn
  • 1/2 cup grated cheddar cheese

Preparation:

Combine pork, tomatoes, green chiles, sweet potatoes, onions, garlic, cumin, oregano, salt, black pepper, and hot pepper sauce in a slow cooker. Cover and simmer until meat is tender, 6 to 7 hours.

Add corn, cover again and simmer until corn is hot, 10 to 15 minutes. Sprinkle with grated cheddar cheese and serve.
