A traditional bread from the Oaxaca region, its cuisine is one of the most interesting in the country. It is a sweet bread that is often eaten for breakfast or snack. Usually used to prepare toast.

- Flour 1kg
- 185g sugar
- 5 eggs
- Make varnish from 1 egg white and 1/2 egg yolk.
- 1 tablespoon aniseed
- 1/4 liter hot water
- Dried natural yeast 45g
- 1 tablespoon salt
- 150g butter
Preparation:
Dissolve yeast in warm water. Add 125 grams of flour and 1 tablespoon of sugar. Mix and leave for 1 hour.
Add the remaining flour to a deep bowl. Make a hole in the center and add the remaining sugar, butter, salt, eggs, anise and yeast. Knead until you get a homogeneous ball. Dust the counter with flour and knead the dough until it is bubbly and elastic.
Place the dough in a buttered container, cover with a cloth and leave in a warm, draft-free place to rest until doubled in volume. Make two rounds of bread, place in a greased baking dish and let rest until doubled in size again.
Make a cut on the surface of each bread, brush with egg white, and bake in the oven at 190℃ for about 40 minutes.
