nopales
Heat the oil in a frying pan and add the fresh nopales, sliced white onion and 3 sprigs of coriander.
Stir to coat well with oil and cook uncovered for 5 minutes without stirring constantly.
Nopales release juice, this is normal and must be consumed. If this happens, remove and discard the onions and cilantro. Place the nopales on a plate and set aside.
If desired, add another tablespoon of oil to the same skillet and add the chopped white and red onions. Once transparent, add the chopped sausage, fry for a few minutes, add the nopales, season with salt, pepper oregano, Knorr chicken cubes and stir.
Add the strained tomato sauce and as soon as it boils, remove from the heat and place on a fireproof surface, then add the chopped coriander and chopped tomatoes.
Serve preferably with toast or corn tortillas.
option: You can skip the tomato sauce step, transfer the nopales to a refractory after the cilantro and tomatoes, add Panela cheese, and you’ve already got a red, green, and white salad to accompany your Mexican meal.
