How to make fava bean cream
First, wash the potatoes, boil them, and once they are boiled, peel them.
Meanwhile, peel and wash the fava beans, boil them in boiling water for 10 minutes, drain and run under cold running water in the sink.
In a pan, fry the green onions in a little oil, add the fava beans (save some for garnishing), season to taste, pour in the hot stock and simmer until softened (this will take about 30 minutes). Add the cut potatoes.
Finally, mix in a blender until you get a thick but liquid cream (add more broth if necessary).
Just season with salt and pepper, garnish with mint, flaked pecorino cheese, and fava beans, and serve to create creamy fava bean soup.
