How to make cookie bites
First, cube well-chilled butter in the refrigerator and mix it with flour (you get a crumbly mixture), then add sugar and salt and knead until a homogeneous dough is obtained.
Wrap in plastic wrap and refrigerate for at least 1 hour.
Take the dough out again, roll it out between two sheets of baking paper with a rolling pin to about 1cm, then cut it into squares to make biscuits.
Place the biscuits in the refrigerator for at least 20 minutes.
Cook in a fan oven preheated to 180°C for about 10-15 minutes or until golden brown and leave to cool completely.
Prepare the icing. Start whisking the egg whites until half-frothy, then add the lemon and sugar and mix carefully.
Decorate 1/3 of the biscuits with icing, add sprinkles, and divide remaining icing between 2 small bowls.
Add the coloring to the other two bowls, mix well and decorate with the other biscuits. Always add sprinkles at the end.
Cookie bites are ready. Just let it dry for at least an hour or two before bringing it to the table and enjoying.
